Breakfast Pizza

At our house, we like pizza but we love breakfast! I had pinned a couple of breakfast pizza pins on Pinterest. I didn't love any of the recipes entirely. So I decided to combine the best of each and create my own. 


Ingredients
6oz of Breakfast Sausage (about half a roll)
1/4 cup of chopped onions
1/2 tsp of minced garlic
Cornmeal for dusting
Pillsbury Thin Crust pizza dough
8oz Mozzarella Cheese, shredded
2oz Parmesan Cheese, shredded
Handfull of Spinach
3 eggs

Directions
Preheat oven to 400°F Break apart sausage into small bits and cook fully in a medium pan. Remove sausage from pan and set aside. Cook onion and garlic in the remnants from the sausage. Cook until translucent. Set aside. 

Dust pizza stone or baking sheet with cornmeal. Roll out dough on pizza stone or baking sheet. It dough is bigger than pizza stone like mine was, cut excess and fold over edges. Spread shredded mozzarella cheese over dough, top with cooked onions and garlic. Top with single layer of spinach, then parmesan cheese. Crack 3 eggs over the pizza. Salt and pepper to taste.

Bake pizza for 12 minutes or until golden brown. (I had to use the broiler to brown mine.)

Top pizza with cooked sausage immediately after baking. Serve immediately. 

I have also used bacon instead of sausage in the past. Try it, it is just as tasty!
